  • 2 pieces Chicken breasts
  • 0.5 cups All-purpose flour
  • 1 teaspoons Salt
  • 1 teaspoons Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 1 cups Chicken broth
  • 0.5 cups Dry white wine
  • 2 tablespoons Lemon juice
  • 1 tablespoons Dijon mustard
  • 1 tablespoons Capers
  • 2 tablespoons Chopped fresh parsley
  • 4 pieces Lemon slices

Directions

Step 1

Slice the chicken breasts in half horizontally to create 4 thin pieces. Place each piece between plastic wrap and gently pound with a meat mallet until about 1/4-inch thick.

Step 2

In a shallow dish, combine the flour, salt, and black pepper. Dredge each chicken piece in the seasoned flour, shaking off excess.

Step 3

In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Add the chicken and cook for 2-3 minutes per side until golden brown and fully cooked. Transfer the chicken to a plate and keep warm.
