Ingredients

  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 teaspoon lemon zest
  • 2 tablespoons granulated sugar
  • 1 tablespoon unsalted butter
  • 1 large egg yolk
  • 0.25 teaspoons vanilla extract
  • 1 pinch pinch of salt

Directions

Step 1

In a small saucepan, combine the lemon juice, lemon zest, and granulated sugar.

Step 2

Place the saucepan over medium-low heat and stir until the sugar has dissolved completely.

Step 3

Add the butter and stir until melted and fully incorporated.

Step 4

In a small bowl, whisk the egg yolk until smooth.

Step 5

Slowly temper the egg yolk by adding a small amount of the warm lemon mixture to the yolk, whisking constantly to prevent curdling.

Step 6

Gradually pour the tempered yolk mixture back into the saucepan, stirring constantly.

Step 7

Continue to cook the sauce over medium-low heat, stirring continuously, until it thickens slightly and coats the back of a spoon (approximately 2-3 minutes). Do not let it boil.

Step 8

Remove the saucepan from the heat and stir in the vanilla extract and a pinch of salt.

Step 9

Allow the sauce to cool slightly before serving. It can be served warm or chilled.

Step 10

Drizzle over your favorite dessert and enjoy!
