Ingredients

  • 2 large Fresh lemons
  • 200 grams Dates (pitted)
  • 120 milliliters Water
  • 100 grams Sugar
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Red chili powder
  • 0.5 teaspoon Salt
  • 1 teaspoon Ginger (grated)
  • 0.5 teaspoon Mustard seeds
  • 1 tablespoon Vegetable oil

Directions

Step 1

Wash the lemons thoroughly and pat them dry. Slice them into thin quarters, removing any seeds.

Step 2

In a small saucepan, bring 120 milliliters of water to a boil. Add the lemon slices and cook for 5 minutes to soften the rind. Drain the water and set the lemons aside.

Step 3

In a blender or food processor, add the pitted dates and blend into a coarse paste. You may use a few teaspoons of water if needed to help with blending.

Step 4

Heat the vegetable oil in a saucepan over medium heat. Add the mustard seeds and let them pop for 30 seconds.

Step 5

Add the grated ginger and sauté for 1 minute until fragrant.

Step 6

Add the softened lemon pieces, prepared date paste, ground cumin, ground coriander, red chili powder, and salt to the saucepan. Stir well to combine.

Step 7

Add 100 grams of sugar and stir until it dissolves. Reduce the heat to low and simmer the mixture for 10-15 minutes, stirring occasionally, until it thickens into a chutney-like consistency.

Step 8

Turn off the heat and let the chutney cool to room temperature. Taste and adjust seasonings if needed.

Step 9

Transfer the Lemon Date Chutney to a sterilized glass jar or airtight container for storage. Refrigerate and consume within 1-2 weeks.
