Ingredients

  • 3 large Lemons
  • 3 large Eggs
  • 150 grams Granulated sugar
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water
  • 2 tablespoons Olive oil (mild or light-tasting)

Directions

Step 1

Zest and juice the lemons to yield about 1 tablespoon of zest and 120 ml (1/2 cup) of lemon juice. Set aside.

Step 2

In a medium heatproof bowl, whisk together the eggs, granulated sugar, and lemon zest until smooth and well combined.

Step 3

In a small bowl, mix the cornstarch and water to create a slurry. Stir this mixture into the egg mixture.

Step 4

Add the lemon juice to the bowl and whisk until fully incorporated.

Step 5

Place the bowl over a pot of simmering water (double boiler method) and cook, stirring constantly, until the mixture thickens enough to coat the back of a spoon. This will take about 8–10 minutes. Ensure the heat is gentle to avoid curdling the eggs.

Step 6

Once the curd has thickened, remove it from the heat and strain it through a fine-mesh sieve into a clean bowl to remove any lumps or zest pieces.

Step 7

Whisk in the olive oil until the curd is smooth and glossy.

Step 8

Allow the lemon curd to cool to room temperature, then transfer it to a clean jar or airtight container. Refrigerate for at least 2 hours to set fully before serving.
