Ingredients

  • 4 large Egg yolks
  • 100 grams Granulated sugar
  • 1 tablespoon Lemon zest
  • 80 milliliters Freshly squeezed lemon juice
  • 85 grams Unsalted butter
  • 240 milliliters Heavy whipping cream
  • 15 grams Powdered sugar
  • 1 teaspoon Vanilla extract

Directions

Step 1

In a medium heatproof bowl, whisk together the egg yolks, granulated sugar, lemon zest, and freshly squeezed lemon juice until smooth.

Step 2

Set the bowl over a pot of simmering water (double boiler method), ensuring the bottom of the bowl does not touch the water.

Step 3

Whisk continuously for about 8-10 minutes, or until the mixture thickens and coats the back of a spoon.
