Directions

Step 1

Preheat your oven to 180°C (350°F) and line two baking sheets with parchment paper.

In a large mixing bowl, beat the unsalted butter and granulated sugar together using an electric mixer on medium speed until the mixture is light and fluffy, about 2-3 minutes.

Add the egg, lemon zest, and fresh lemon juice to the bowl, and mix until well combined.
