Ingredients

  • 120 ml Lemon juice
  • 2 whole lemons Lemon zest
  • 150 g Granulated sugar
  • 3 large Eggs
  • 1 tbsp Unflavored gelatin powder
  • 3 tbsp Water
  • 250 ml Heavy cream
  • 1 pinch Salt

Directions

Step 1

In a small bowl, sprinkle the gelatin powder over 3 tablespoons of cold water and let it bloom for 5 minutes.

Step 2

In a medium saucepan, whisk together the lemon juice, lemon zest, granulated sugar, eggs, and a pinch of salt.

Step 3

Place the saucepan over medium heat, stirring constantly with a whisk, and cook until the mixture thickens and coats the back of a spoon, about 5–7 minutes. Do not let it boil.

Step 4

Remove the saucepan from heat and stir in the bloomed gelatin until fully dissolved. Allow the lemon mixture to cool to room temperature, stirring occasionally to prevent a skin from forming.
