Ingredients

  • 2 cups All-purpose flour
  • 0.333 cup Granulated sugar
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 0.5 cup Cold unsalted butter, cubed
  • 4 ounces Cream cheese, cubed and chilled
  • 2 teaspoons Lemon zest
  • 2 tablespoons Fresh lemon juice
  • 0.333 cup Heavy cream
  • 1 teaspoon Vanilla extract
  • 1 large Egg (for egg wash, optional)
  • 1 cup Powdered sugar (for glaze)
  • 2 tablespoons Fresh lemon juice (for glaze)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

Step 3

Using a pastry cutter or your fingertips, cut the cold butter and cream cheese into the dry ingredients until the mixture resembles coarse crumbs.

Step 4

Stir in the lemon zest.

Step 5

In a small bowl, combine the heavy cream, fresh lemon juice, and vanilla extract. Mix well.

Step 6

Pour the wet ingredients into the dry ingredients, stirring gently with a fork until the dough just comes together. Do not overmix.

Step 7

Transfer the dough to a lightly floured surface and gently knead it a few times to bring it together. Pat it into a circle about 1 inch thick.

Step 8

Using a sharp knife or bench scraper, divide the dough into 8 wedges.

Step 9

Transfer the wedges to the prepared baking sheet, spacing them apart slightly.

Step 10

If desired, beat the egg in a small bowl to create an egg wash and lightly brush it over the tops of the scones for a golden finish.

Step 11

Bake for 16–18 minutes, or until the scones are golden brown and cooked through. Remove from the oven and let cool slightly on the baking sheet before transferring them to a wire rack.

Step 12

While the scones are cooling, make the glaze. In a small bowl, whisk together the powdered sugar and fresh lemon juice until smooth.

Step 13

Drizzle the glaze over the slightly warm scones. Let the glaze set before serving.

Step 14

Serve the scones warm or at room temperature. Enjoy with a cup of tea, coffee, or your favorite spread!
