Ingredients

  • 227 grams Cream cheese
  • 113 grams Unsalted butter
  • 360 grams Powdered sugar
  • 2 tablespoons Fresh lemon juice
  • 1 teaspoon Lemon zest
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt

Directions

Step 1

In a large mixing bowl, combine the cream cheese and unsalted butter. Make sure both ingredients are softened to room temperature for easy mixing.

Step 2

Using a hand mixer or a stand mixer fitted with a paddle attachment, beat the cream cheese and butter on medium speed until the mixture is smooth and creamy, about 2 minutes.

Step 3

Gradually add the powdered sugar, about 1/3 at a time, mixing on low speed after each addition until fully incorporated. Scrape down the sides of the bowl as needed.

Step 4

Once all the powdered sugar is incorporated, add the fresh lemon juice, lemon zest, vanilla extract, and a pinch of salt.

Step 5

Increase the mixer speed to medium and beat the icing for another 2-3 minutes until it is light, fluffy, and smooth.

Step 6

Taste the icing and adjust the lemon juice or sugar if necessary, depending on your preference for tanginess or sweetness.

Step 7

Use immediately to frost cakes, cupcakes, or cookies, or store in an airtight container in the refrigerator for up to one week. Bring back to room temperature and stir well before using.
