Ingredients

  • 4 pieces cod fillets
  • 1 whole lemon
  • 3 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 cups white mushrooms
  • 2 cloves garlic
  • 2 tablespoons fresh parsley
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper

Directions

Step 1

Rinse the cod fillets under cold water and pat them dry with paper towels. Set aside.

Step 2

Slice the lemon in half. Juice one half of the lemon and slice the other half into thin rounds. Mince the garlic cloves and chop the fresh parsley.

Step 3

Clean the white mushrooms with a damp paper towel and slice them thinly.

Step 4

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the cod fillets to the pan, seasoning them with a pinch of salt and black pepper on each side.

Cook the cod for 3-4 minutes on the first side, then gently flip and cook for another 3-4 minutes on the second side, until the fish turns opaque and flakes easily with a fork. Remove the cod from the skillet and set aside on a plate, covering it loosely with foil to keep warm.
