Ingredients

  • 2.5 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 1 cup Unsalted butter, softened
  • 2 cups Granulated sugar
  • 4 large Eggs
  • 0.25 cup Fresh lemon juice
  • 1 tablespoon Lemon zest
  • 0.5 cup Coconut milk
  • 0.5 cup Shredded sweetened coconut
  • 1 cup Powdered sugar (optional for glaze)
  • 2 tablespoons Fresh lemon juice (for glaze)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper.

Step 2

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

In a large mixing bowl, beat the softened butter and granulated sugar together with an electric mixer until light and fluffy, about 3-4 minutes.
