Ingredients

  • 1 cup long-grain white rice
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh chives, finely chopped
  • 1 tablespoon unsalted butter
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Rinse the rice under cold running water until the water runs clear to remove excess starch. Drain well.

Step 2

In a medium saucepan, bring the water to a boil over medium-high heat. Add the rice, olive oil, and salt.

Reduce the heat to low, cover the saucepan with a tight-fitting lid, and simmer the rice for 18-20 minutes or until all the water is absorbed.
