  • 1.5 pounds baby potatoes
  • 3 tablespoons unsalted butter
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons chives
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 8 cups water

Directions

Step 1

Wash the baby potatoes thoroughly and cut any large ones in half to ensure even cooking.

Step 2

In a large pot, add 8 cups of water and 1 teaspoon of salt. Bring the water to a boil over high heat.

Step 3

Carefully add the potatoes to the boiling water. Reduce the heat to medium and simmer for 10-12 minutes or until the potatoes are fork-tender.

While the potatoes are cooking, finely chop the chives and zest the lemon, setting them aside.

When the potatoes are done, drain them in a colander and allow them to sit for 1-2 minutes to dry slightly.
