Ingredients

  • 400 grams Penne pasta
  • 500 grams Chicken breast
  • 3 tablespoons Olive oil
  • 4 cloves Garlic, minced
  • 1 teaspoon Red chili flakes
  • 1 whole lemon Lemon zest
  • 3 tablespoons Lemon juice
  • 1 cup Chicken broth
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Parmesan cheese, grated

Directions

Step 1

Bring a large pot of salted water to boil and cook the penne pasta according to the package instructions. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Step 2

Slice the chicken breasts into bite-sized strips and season with half the salt and black pepper.

Step 3

In a large skillet over medium-high heat, heat 2 tablespoons of olive oil. Add the chicken strips and cook for 5-6 minutes until golden brown and fully cooked through. Remove the chicken and set aside.
