Ingredients

  • 4 pieces Chicken breasts
  • 0.25 cup Lemon juice
  • 1 teaspoon Lemon zest
  • 2 tablespoons Fresh thyme leaves
  • 3 tablespoons Olive oil
  • 3 Garlic cloves, minced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Chicken stock
  • 2 tablespoons Unsalted butter
  • 4 pieces Lemon slices

Directions

Step 1

Place the chicken breasts on a cutting board and, if they are thick, pound them slightly to ensure even cooking.

Step 2

In a large bowl, mix together the lemon juice, lemon zest, thyme leaves, 2 tablespoons of olive oil, minced garlic, salt, and black pepper.

Step 3

Add the chicken breasts to the bowl, ensuring they are well-coated with the marinade. Cover and let marinate in the refrigerator for 30 minutes to 1 hour.

Step 4

Preheat your oven to 375°F (190°C).

Step 5

Heat the remaining 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat.

Step 6

Remove the chicken breasts from the marinade (reserving the marinade) and sear them in the skillet for 2-3 minutes per side, until golden brown.

Step 7

Reduce the heat to medium and add the reserved marinade, chicken stock, and butter to the skillet. Bring to a simmer, then top each chicken breast with a lemon slice.

Step 8

Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the internal temperature of the chicken reaches 165°F (75°C).

Step 9

Carefully remove the skillet from the oven and let the chicken rest for 5 minutes before serving.

Step 10

Serve the lemon chicken with the pan sauce drizzled over the top, and garnish with additional fresh thyme, if desired.
