In a small bowl, combine the saffron threads with 2 tablespoons of warm water. Let them steep for about 5 minutes to release their flavor and color.
Pat the chicken thighs dry with paper towels and season them on both sides with salt and black pepper.
Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil. Once hot, place the chicken thighs skin-side down in the skillet and sear until golden and crispy, about 5 minutes. Flip the chicken and sear the other side for another 4 minutes. Transfer the chicken to a plate and set aside.
Reduce the heat to medium and add the remaining 1 tablespoon of olive oil to the skillet. Add the minced garlic and sauté until fragrant, about 30 seconds, taking care not to burn it.
Deglaze the skillet with the chicken stock, scraping up any brown bits from the bottom of the pan with a wooden spoon.

Return the chicken thighs to the skillet, skin-side up, and spoon some of the sauce over them. Add the thyme sprigs to the skillet.
Reduce the heat to low, cover, and let the chicken simmer for 25-30 minutes, or until the chicken is cooked through and tender. The internal temperature should reach 165°F (75°C).
Remove the lid and increase the heat to medium-high. Let the sauce reduce slightly for about 3-5 minutes to thicken.
Taste the sauce and adjust seasoning with additional salt or honey, if necessary.
Serve the chicken thighs with the sauce spooned over the top. Pair with rice, couscous, or roasted vegetables for a complete meal.
