Ingredients

  • 12 oz spaghetti
  • 2 medium boneless, skinless chicken breasts

  • 3 tbsp olive oil
  • 3 tbsp unsalted butter
  • 3 garlic cloves, minced
  • 3 tbsp lemon juice
  • 1 zest of lemon
  • 0.5 cup chicken broth
  • 0.5 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

Step 2

Season the chicken breasts with 1 teaspoon of salt and 1 teaspoon of black pepper on both sides.

Step 3

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken breasts and cook for 5-6 minutes per side, or until golden brown and fully cooked (internal temperature of 165°F/75°C). Remove from the skillet and let rest for 5 minutes, then slice into thin strips.

In the same skillet, reduce the heat to medium. Add 1 tablespoon of olive oil and 2 tablespoons of butter, allowing the butter to melt.
