  • 2 pieces chicken breasts, boneless and skinless

  • 0.5 teaspoon thyme, dried
  • 0.5 cup rice, uncooked
  • 0.25 cup lemon juice, freshly squeezed
  • 1 teaspoon lemon zest
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley, chopped

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add the chopped onion and cook until translucent, about 5 minutes.

Stir in the minced garlic, sliced carrots, and sliced celery. Cook for another 3-4 minutes until the vegetables start to soften.
