  • 1 cups chicken broth
  • 0.25 cups fresh lemon juice
  • 2 tablespoons capers
  • 2 tablespoons fresh parsley, chopped
  • 6 cups baby spinach
  • 1 tablespoon extra olive oil (for spinach)
  • 1 teaspoon lemon zest

Directions

Step 1

Place each chicken breast between two sheets of plastic wrap or parchment paper and pound them with a meat mallet until they are about 1/4 inch thick.

Step 2

In a shallow dish, mix the flour, salt, and black pepper. Dredge each chicken breast in the flour mixture, shaking off any excess.
