Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.5 cups all-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1.5 cups chicken broth
  • 0.25 cups freshly squeezed lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon honey
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 2 tablespoons fresh parsley, chopped
  • 2 cups white rice, uncooked
  • 4 cups water (for rice)
  • 1 teaspoon salt (for rice)

Directions

Step 1

Season the chicken breasts on both sides with salt and black pepper.

Step 2

Dredge the chicken breasts lightly in the all-purpose flour, shaking off any excess flour.

Step 3

Heat olive oil and butter in a large skillet over medium-high heat.

Step 4

Sear the chicken breasts in the skillet for 4-5 minutes on each side, until golden brown. Remove the chicken from the skillet and set aside.

Step 5

In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for 1-2 minutes until fragrant.

Step 6

Pour in the chicken broth, lemon juice, lemon zest, and honey. Stir to combine and bring the mixture to a simmer.

Step 7

In a small bowl, whisk together the cornstarch and water to make a slurry. Gradually whisk the slurry into the lemon sauce to thicken it.

Step 8

Return the chicken breasts to the skillet. Cover and allow the chicken to simmer in the sauce for 10-12 minutes, or until fully cooked and the internal temperature reaches 165°F (74°C).

Step 9

Meanwhile, rinse the uncooked rice under cold water until the water runs clear.

Step 10

In a medium saucepan, bring 4 cups of water to a boil and add the salt for the rice. Stir in the rice, reduce the heat to low, cover, and cook for 18-20 minutes, or until the rice is tender and water is absorbed.

Step 11

Once the chicken is done, sprinkle fresh parsley over the skillet as a garnish.

Step 12

To serve, plate a generous scoop of rice and top it with a chicken breast and a spoonful of the lemon sauce. Enjoy!
