Bring a large pot of salted water to a boil. Cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
While the pasta cooks, season the chicken breasts with salt and pepper on both sides.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Cook the chicken for 3-4 minutes per side, or until golden brown and cooked through. Remove from the skillet and set aside to rest. Once slightly cooled, slice the chicken into strips.
