Ingredients

  • 1 lb Boneless, skinless chicken breasts
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Olive oil
  • 2 cloves Garlic cloves, minced
  • 1 lb Asparagus, trimmed and cut into 2-inch pieces
  • 1 tsp Lemon zest
  • 2 tbsp Lemon juice
  • 0.5 cup Chicken broth
  • 3 cups Cooked white rice
  • 2 tbsp Fresh parsley, chopped (optional for garnish)

Directions

Step 1

Trim and cut the chicken breasts into bite-sized cubes. Season with 1 tsp salt and 0.5 tsp black pepper.

Step 2

Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tbsp olive oil and minced garlic. Sauté for 1 minute or until fragrant.
