Ingredients

  • 1 cup All-purpose flour
  • 0.5 cup Unsalted butter
  • 4 ounces Cream cheese
  • 0.75 cup Granulated sugar
  • 1 unit Large egg
  • 2 tablespoons Lemon juice
  • 1 teaspoon Lemon zest
  • 0.5 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 1 tablespoon Powdered sugar (for garnish, optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a mini muffin tin or line it with paper liners.

Step 2

In a medium mixing bowl, combine the all-purpose flour, unsalted butter, and cream cheese. Mix until a soft dough forms.

Step 3

Divide the dough into 12 equal portions and press each portion into the mini muffin tin wells, forming small cups.

Step 4

In another mixing bowl, whisk together the granulated sugar, egg, lemon juice, lemon zest, vanilla extract, and salt until smooth and well-combined.

Step 5

Pour the lemon filling evenly into each prepared dough cup, filling them about three-quarters full.

Step 6

Bake in the preheated oven for 22-25 minutes, or until the edges of the crust are lightly golden and the filling is set.

Step 7

Remove the tassies from the oven and allow them to cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.

Step 8

If desired, dust the tops with powdered sugar before serving for an extra touch of sweetness and presentation.

Step 9

Serve immediately or store in an airtight container in the fridge for up to 3 days. Enjoy!
