Ingredients

  • 15 ounces Cannellini beans (cooked, drained, and rinsed)
  • 2 tablespoons Olive oil
  • 2 tablespoons Fresh lemon juice
  • 1 teaspoon Lemon zest
  • 2 tablespoons Capers (drained and rinsed)
  • 2 Garlic cloves (roasted or fresh, depending on preference)
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 tablespoons Water (optional, to adjust consistency)
  • 1 tablespoon Fresh parsley (chopped, for garnish)
  • 1 tablespoon Optional: extra olive oil (for drizzling)
  • 0 Optional: crackers, pita chips, or fresh veggies (for serving)

Directions

Step 1

If using fresh garlic, roast it ahead of time by wrapping the garlic cloves in foil, drizzling with a little olive oil, and placing in a 375°F (190°C) oven for 20 minutes until soft and fragrant. Let cool before using.

Step 2

In a food processor or blender, combine the drained cannellini beans, olive oil, lemon juice, lemon zest, capers, roasted or fresh garlic, salt, and black pepper.

Step 3

Blend until smooth and creamy, scraping down the sides as needed to ensure all ingredients are incorporated.

Step 4

If the dip is too thick, add 1 to 2 tablespoons of water, one at a time, to achieve the desired consistency.

Step 5

Taste and adjust seasoning, adding more salt, pepper, or lemon juice if needed.

Step 6

Transfer the dip to a serving bowl and garnish with chopped parsley, an optional drizzle of olive oil, and a few whole capers for presentation.

Step 7

Serve with crackers, pita chips, or fresh vegetables like carrots, cucumber slices, or bell pepper strips.
