  • 200 grams unsalted butter
  • 200 grams caster sugar
  • 3 large eggs
  • 2 tablespoons lemon zest
  • 60 ml fresh lemon juice

  • 100 ml whole milk
  • 150 grams powdered sugar
  • 30 ml lemon juice (for glaze)

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a 9x13 inch baking tray with parchment paper.

In a large mixing bowl, beat the unsalted butter and caster sugar together until light and fluffy.

Add the eggs, one at a time, mixing well after each addition.
