  • 0.5 cup Unsalted butter (softened)
  • 1 cup Granulated sugar
  • 2 large Eggs
  • 3 tablespoons Fresh lemon juice
  • 1 tablespoon Lemon zest
  • 0.5 cup Whole milk
  • 1 cup Powdered sugar
  • 2 tablespoons Fresh lemon juice (for glaze)
  • 1 teaspoon Lemon zest (for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a mini muffin pan with paper liners or lightly grease each cavity with nonstick spray.

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

In a large mixing bowl, beat the softened butter and granulated sugar together using an electric mixer on medium speed until light and fluffy, about 2-3 minutes.
