Ingredients

  • 1 packet (2.5 teaspoons) Unflavored gelatin powder
  • 3 tablespoons Cold water
  • 2 cups Heavy cream
  • 0.5 cup Granulated sugar
  • 1 teaspoon Lemon zest
  • 1 teaspoon Vanilla extract
  • 1 cup Buttermilk
  • 2 cups Fresh blueberries
  • 0.25 cup Granulated sugar (for blueberry sauce)
  • 1 tablespoon Lemon juice
  • 2 tablespoons Water (for blueberry sauce)

Directions

Step 1

In a small bowl, sprinkle the gelatin over the cold water and let it bloom for 5 minutes until it softens.

In a medium saucepan, combine the heavy cream, sugar, and lemon zest. Heat over medium heat, stirring occasionally, until the sugar is dissolved and the mixture is hot but not boiling.

Remove the saucepan from heat and stir in the bloomed gelatin until completely dissolved.
