  • 4 large Eggs
  • 1.25 cups Granulated sugar (for filling)
  • 0.5 cups Lemon juice (freshly squeezed)
  • 1 tablespoon Lemon zest (finely grated)
  • 0.5 cups Unsalted butter (softened for filling)
  • 2 tablespoons Heavy cream
  • 0.25 teaspoons Salt

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large bowl, mix the all-purpose flour and granulated sugar. Add the cold unsalted butter, cutting it into the flour mixture with a pastry cutter or fork until it resembles coarse crumbs.

Slowly add the ice water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 15 minutes.
