Ingredients

  • 2 cups Heavy cream
  • 0.75 cup Granulated sugar
  • 6 large Egg yolks
  • 1 tablespoon Lemon zest
  • 0.25 cup Lemon juice
  • 1 teaspoon Vanilla extract
  • 0.125 teaspoon Salt
  • 6 teaspoons Granulated sugar (for topping)

Directions

Step 1

Preheat your oven to 325°F (160°C).

In a medium saucepan, heat the heavy cream over medium heat until it begins to steam, but do not let it boil.

Step 3

While the cream is heating, whisk together 1/2 cup of granulated sugar and the egg yolks in a mixing bowl until the mixture is pale and thick.

Slowly pour the warm cream into the egg mixture, whisking constantly to prevent the eggs from curdling.

Stir in the lemon zest, lemon juice, vanilla extract, and salt until well combined.
