  • 4 pounds bone-in veal shoulder
  • 2 teaspoons kosher salt
  • 1 teaspoons black pepper
  • 3 tablespoons olive oil
  • 1 large yellow onion, diced
  • 2 medium carrot, diced
  • 2 medium celery stalks, diced
  • 4 cloves garlic cloves, minced
  • 1 cup dry white wine
  • 2 cups chicken stock
  • 2 whole lemons, juiced and zested
  • 5 sprigs fresh thyme sprigs
  • 1 whole bay leaf
  • 2 tablespoons parsley, chopped (for garnish)

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Season the veal shoulder generously with 2 teaspoons of kosher salt and 1 teaspoon of black pepper on all sides.

Step 3

Heat 2 tablespoons of olive oil in a large, heavy-bottomed Dutch oven over medium-high heat.

Step 4

Sear the veal shoulder on all sides until golden brown, about 4 minutes per side. Remove the veal from the pot and set it aside.

Add the remaining 1 tablespoon of olive oil to the pot, then add the diced onion, carrot, and celery. Sauté the vegetables until softened, about 5-7 minutes.

Meanwhile, skim any excess fat from the surface of the cooking liquid and discard the thyme sprigs and bay leaf.
