Ingredients

  • 1.25 cups All-purpose flour
  • 0.25 cups Powdered sugar
  • 0.5 cups Unsalted butter, chilled and diced
  • 0.75 cups Granulated sugar
  • 3 Large eggs
  • 0.5 cups Freshly squeezed lemon juice
  • 1 tablespoon Lemon zest, finely grated
  • 3 tablespoons All-purpose flour (for filling)
  • 1 tablespoon Powdered sugar (for topping)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.

Step 2

In a medium mixing bowl, combine 1 1/4 cups of all-purpose flour and 1/4 cup of powdered sugar. Add the chilled, diced butter and use a pastry cutter or forks to mix until the mixture resembles coarse crumbs.

Press the crumb mixture evenly into the bottom of the prepared pan to form the crust. Bake in the preheated oven for 15 minutes, or until lightly golden.
