Ingredients

  • 1 cup Fresh lemon balm leaves
  • 0.5 cup Extra virgin olive oil
  • 2 tablespoons Fresh lemon juice
  • 1 tablespoon Honey (or maple syrup for vegan option)
  • 1 teaspoon Dijon mustard
  • 1 Garlic clove (minced)
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Water (optional, for thinning)

Directions

Step 1

Rinse the fresh lemon balm leaves thoroughly under cool water and pat them dry with a clean kitchen towel.

Step 2

In a food processor or blender, combine the lemon balm leaves, olive oil, fresh lemon juice, honey (or maple syrup), Dijon mustard, minced garlic, salt, and black pepper.

Step 3

Blend the ingredients together until smooth and emulsified. Taste and adjust the seasoning, adding more salt, pepper, or lemon juice if desired.

Step 4

For a thinner consistency, add water one teaspoon at a time, blending after each addition until the desired texture is achieved.

Step 5

Transfer the dressing to a clean jar or bottle with a secure lid for storage.

Step 6

Serve immediately over your favorite salads, vegetables, or proteins. Store any leftovers in the refrigerator for up to one week. Shake well before each use as natural separation may occur.
