Ingredients

  • 2.5 cups All-purpose flour
  • 1 tablespoon Granulated sugar
  • 0.5 teaspoons Salt
  • 1 cup Unsalted butter, cold and cubed
  • 6 tablespoons Ice water
  • 6 cups Apples (Granny Smith or Honeycrisp), peeled, cored, and sliced
  • 3 tablespoons Lemon juice
  • 1 tablespoon Lemon zest
  • 0.5 cup Brown sugar
  • 0.25 cup Granulated sugar
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Nutmeg
  • 1.5 tablespoons Cornstarch
  • 1 unit Egg, beaten
  • 1 tablespoon Granulated sugar, for sprinkling

Directions

Step 1

In a large bowl, mix together the flour, 1 tablespoon of sugar, and salt. Cut in the cold cubed butter using a pastry cutter or two forks until the mixture resembles coarse crumbs.

Step 2

Gradually add the ice water, 1 tablespoon at a time, mixing gently until the dough comes together. Divide the dough into two equal portions, shape into disks, wrap in plastic wrap, and chill in the refrigerator for at least 30 minutes.

Step 3

Preheat your oven to 375°F (190°C).

Step 4

In a large mixing bowl, combine the sliced apples, lemon juice, lemon zest, brown sugar, 0.25 cup granulated sugar, ground cinnamon, nutmeg, and cornstarch. Toss until the apples are evenly coated and set aside.

Step 5

On a lightly floured surface, roll out one of the chilled dough disks into a circle large enough to fit a 9-inch pie dish. Transfer the rolled dough to the pie dish, pressing it gently into the bottom and sides.

Step 6

Pour the apple filling into the dough-lined pie dish and spread it out evenly.

Step 7

Roll out the second dough disk into a circle and place it over the apple filling. Trim any excess dough hanging over the edges and crimp or press the edges to seal. Cut a few small slits in the top crust to allow steam to escape.

Step 8

Brush the top crust with the beaten egg and sprinkle with 1 tablespoon of granulated sugar for a golden and slightly sweet finish.

Step 9

Place the pie on a baking sheet to catch any drips and bake in the preheated oven for 50-60 minutes, or until the crust is golden brown and the filling is bubbling.

Step 10

Remove the pie from the oven and let it cool on a wire rack for at least 2 hours to allow the filling to set.

Step 11

Slice and serve your Lemon Apple Pie warm or at room temperature, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
