Ingredients

  • 5 whole Lemons
  • 2 tablespoons Mustard seeds
  • 1.5 cups Sugar
  • 1 teaspoon Salt
  • 0.5 teaspoons Turmeric powder
  • 0.5 teaspoons Red chili powder
  • 1 inch piece Ginger
  • 1 cup Water
  • 2 tablespoons Vegetable oil

Directions

Step 1

Wash the lemons thoroughly and pat them dry. Cut them into small pieces, removing all seeds to avoid bitterness.

Step 2

Peel the ginger and finely grate it.

Step 3

Heat the vegetable oil in a heavy-bottomed pan over medium heat. Once hot, add the mustard seeds and let them splutter for about 30 seconds.

Add the grated ginger to the pan and sauté for 1-2 minutes until fragrant.

Step 5

Reduce the heat to low and stir in the turmeric powder and red chili powder for a few seconds, ensuring they do not burn.

Step 6

Add the chopped lemons, salt, and water to the pan. Stir well and bring the mixture to a gentle simmer.

Gradually add the sugar while stirring to dissolve it completely. Let the mixture simmer over low heat for 20-25 minutes, stirring occasionally, until the lemons soften and the chutney thickens to your desired consistency.

Taste and adjust the balance of sweetness, salt, and heat, if needed.

Once the chutney has thickened, turn off the heat. Allow it to cool completely to room temperature.

Transfer the chutney to sterilized jars and store in the refrigerator for up to 4 weeks.
