Ingredients

  • 350 g spaghetti
  • 150 g feta cheese
  • 2 lemon
  • 3 garlic cloves
  • 3 tbsp olive oil
  • 3 tbsp fresh parsley
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup reserved pasta water

Directions

Step 1

Bring a large pot of salted water to a boil and cook the spaghetti according to the package instructions. Reserve 0.5 cups of the pasta water before draining.

Step 2

While the pasta cooks, crumble the feta cheese into a medium mixing bowl. Zest one lemon and juice both lemons. Add the zest and juice to the bowl with the feta and set aside.

Step 3

Finely mince the garlic cloves. Heat the olive oil in a large skillet over medium heat. Add the garlic and sauté for 1-2 minutes until fragrant but not browned.

Step 4

Reduce the heat to low and add the cooked spaghetti to the skillet with the garlic. Pour in the reserved pasta water and toss gently to combine.

Stir the feta-lemon mixture into the skillet with the pasta, mixing well so the feta begins to melt and create a creamy sauce. Add salt and black pepper to taste.

Chop the parsley and sprinkle it over the pasta. Toss one final time to evenly distribute the flavors.
