Step 1

Begin by washing and scrubbing the lemons to remove any wax or impurities. Use a vegetable peeler to remove the lemon zest, ensuring not to include the bitter white pith underneath.

In a large saucepan, bring the water to a boil. Once boiling, remove from heat and immediately add the sugar, stirring until completely dissolved to create a clear syrup.
