  • 1 teaspoon Powdered sugar (optional, for topping)

Directions

Step 1

In a small microwave-safe mug or ramekin, combine the all-purpose flour, granulated sugar, baking powder, ground cinnamon, lemon zest, and a pinch of salt. Stir to combine the dry ingredients evenly.

Add the grated carrot to the dry mixture, then pour in the milk, vegetable oil, and vanilla extract. Use a fork to mix everything together until you have a smooth batter. Be sure to scrape the edges and bottom of the mug to incorporate all ingredients.
