  • 1 cup water
  • 2 large egg whites
  • 1 teaspoon vanilla extract
  • 1 cup pecans (optional)
  • 1 pinch salt

Directions

Step 1

Prepare a baking sheet by lining it with parchment paper or a silicone baking mat. Set aside.

In a heavy saucepan, combine the sugar, corn syrup, and water. Stir the mixture over medium heat until the sugar is dissolved.

Increase the heat to medium-high and bring the mixture to a boil. Do not stir while boiling. Use a candy thermometer to monitor the temperature until the mixture reaches 250°F (hard-ball stage).
