Preheat your oven to 375°F (190°C).
Wash the tomatoes thoroughly and slice off the top of each one, reserving the tops as lids.
Using a spoon, carefully scoop out the inside of the tomatoes, leaving a thick outer shell intact. Be careful not to puncture the walls. Reserve the pulp in a bowl.
Chop the reserved tomato pulp finely and mix it with your cooked leftovers, shredded cheese, breadcrumbs, olive oil, garlic, herbs, salt, and pepper in a large bowl.
Stuff each tomato generously with the mixture, pressing it down lightly to fit as much filling as possible.
Place the stuffed tomatoes upright in a baking dish. If they don't stand straight, cut a small slice off the bottom of each to flatten it.
Place the reserved tops back on each tomato, like a lid.
Drizzle a little olive oil over the tops and sides of the tomatoes.
Bake in the preheated oven for 25 minutes, or until the tomatoes are tender and the filling is bubbling and golden on top.
Carefully remove from the oven and allow to cool for 5 minutes before serving. Garnish with additional fresh herbs, if desired.
