Ingredients

  • 15 oz Black beans (canned, drained and rinsed)
  • 2 tbsp Tomato paste
  • 1 medium Yellow onion (diced)
  • 1 medium Bell pepper (any color, diced)
  • 3 cloves Garlic (minced)
  • 2 tbsp Chili powder
  • 1 tsp Ground cumin
  • 1 tsp Smoked paprika
  • 1 tsp Dried oregano
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 cup Chicken or beef broth
  • 1 tbsp Olive oil
  • 0 Optional toppings: shredded cheese, sour cream, chopped cilantro, diced avocado

Directions

Step 1

Heat the olive oil in a skillet over medium heat. Add the diced onion and bell pepper and sauté until softened, about 5 minutes.
