Ingredients

  • 2 cups cooked pork (chopped or shredded)
  • 2 cups leftover gravy
  • 2 cups low-sodium chicken or vegetable broth
  • 2 medium potatoes (peeled and diced)
  • 2 medium carrots (peeled and sliced)
  • 2 stalks celery stalks (sliced)
  • 1 medium onion (diced)
  • 1 cup frozen peas
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 teaspoon dried thyme
  • 0.5 teaspoon dried rosemary
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 piece bay leaf

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onions, carrots, and celery to the pot. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are softened.

Step 3

Stir in the minced garlic, dried thyme, and dried rosemary. Cook for an additional 1-2 minutes until the garlic is fragrant.

Step 4

Add the diced potatoes, leftover pork, gravy, and chicken (or vegetable) broth to the pot. Stir well to combine.

Step 5

Add the bay leaf, salt, and black pepper. Bring the mixture to a gentle boil, then reduce the heat to low and cover the pot.

Step 6

Simmer the stew for 25-30 minutes, or until the potatoes are tender and the flavors have melded together.

Step 7

Stir in the frozen peas and simmer for another 5 minutes, or until the peas are heated through.

Step 8

Taste the stew and adjust seasoning if needed. Remove the bay leaf before serving.

Step 9

Ladle the stew into bowls and serve warm with crusty bread or biscuits on the side.
