  • 4 cups chicken or beef broth
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 leaf bay leaf
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Dice the leftover meatloaf into bite-sized chunks and set aside.

Heat olive oil in a large pot over medium heat.

Peel and dice the yellow onion, carrots, celery, and potatoes. Mince the garlic.
