Ingredients

  • 200 grams Christmas pudding
  • 300 ml Double cream
  • 200 ml Whole milk
  • 4 large Egg yolks
  • 100 grams Caster sugar
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Brandy (optional)

Directions

Step 1

Crumble the leftover Christmas pudding into small chunks and set it aside.

Step 2

In a medium saucepan, combine the double cream and whole milk. Heat gently over medium heat until it begins to steam but do not let it boil. Remove from heat.

In a mixing bowl, whisk together the egg yolks, caster sugar, and vanilla extract until thick and pale.

Slowly pour the hot cream mixture into the egg yolk mixture, whisking constantly to prevent the eggs from scrambling.

Return the custard mixture to the saucepan and cook over low heat, stirring constantly with a wooden spoon, until thickened enough to coat the back of the spoon. Do not let it boil.
