Ingredients

  • 1 cup Leftover cooked chicken
  • 2 tbsp Mayonnaise
  • 1 tsp Dijon mustard
  • 2 tbsp Celery, finely diced
  • 1 tbsp Green onion, finely chopped
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 4 pieces Bread slices
  • 1 tbsp Butter, softened
  • 2 pieces Lettuce leaves
  • 4 pieces Tomato slices

Directions

Step 1

In a medium mixing bowl, shred or chop the leftover cooked chicken into small bite-sized pieces.

Step 2

Add the mayonnaise, Dijon mustard, diced celery, and chopped green onion to the bowl with the chicken. Mix well until evenly combined.

Step 3

Season the chicken mixture with salt and black pepper to taste. Adjust the seasoning if needed.

Step 4

Lightly butter one side of each slice of bread. Heat a skillet or griddle over medium heat.

Step 5

Place the bread slices butter-side down onto the skillet. Toast for 2-3 minutes, or until golden brown, then remove from heat.
