Ingredients

  • 2 links leftover bratwurst
  • 6 large eggs
  • 2 tablespoons milk
  • 1 tablespoon butter
  • 0.5 medium (diced) onion
  • 1 medium (diced, any color) bell pepper
  • 0.5 cup shredded cheddar cheese
  • 0.5 teaspoon (or to taste) salt
  • 0.25 teaspoon (or to taste) black pepper
  • 2 tablespoons (chopped, optional for garnish) fresh parsley

Directions

Step 1

Slice the leftover bratwurst into thin rounds or bite-sized pieces and set aside.

Step 2

In a medium bowl, crack the eggs and whisk them together with the milk until well combined. Season with salt and black pepper and set aside.

Step 3

Heat a large nonstick skillet over medium heat and add the butter. Once melted, add the diced onion and bell pepper. Sauté the vegetables for 3-4 minutes, or until they’re softened and slightly golden.

Step 4

Add the sliced bratwurst to the skillet and cook for an additional 2-3 minutes, stirring occasionally, until the pieces are heated through and lightly browned.

Step 5

Reduce the heat to medium-low and pour the egg mixture over the bratwurst and veggies. Let the eggs sit for about 30 seconds, then gently stir with a spatula to create soft curds.

Step 6

Continue to cook the eggs, stirring occasionally, until they are fully cooked but still tender, about 3-4 minutes.

Step 7

Sprinkle the shredded cheddar cheese over the scramble and gently fold it in until melted and evenly distributed.

Step 8

Remove the skillet from the heat and garnish the scramble with fresh parsley, if using.

Step 9

Serve hot and enjoy your Leftover Bratwurst Scramble as is or with a side of toast or fried potatoes.
