Ingredients

  • 2 cups leftover steak
  • 3 tablespoons butter
  • 2 medium yellow onion
  • 1 teaspoon sugar
  • 0.5 teaspoon salt
  • 1 tablespoon all-purpose flour
  • 1.5 cups milk
  • 1 cup shredded cheddar cheese
  • 0.25 cup Parmesan cheese
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley (optional, for garnish)

Directions

Step 1

Slice the leftover steak into thin strips or bite-sized pieces and set aside.

Step 2

Peel and thinly slice the onions into half-moons.

Step 3

In a large skillet, melt 2 tablespoons of butter over medium heat and add the olive oil to prevent the butter from burning.

Step 4

Add the sliced onions to the skillet and sprinkle them with sugar and a pinch of salt. Stir well to coat.

Step 5

Cook the onions on medium-low heat for 15-20 minutes, stirring occasionally, until they are golden brown and caramelized. Remove from the skillet and set aside.

Step 6

In the same skillet, melt the remaining 1 tablespoon of butter over medium heat. Add the flour and whisk continuously for 1 minute to form a roux.

Step 7

Slowly add the milk to the roux, whisking constantly to prevent lumps, and cook for 2-3 minutes until the mixture thickens slightly.

Step 8

Reduce the heat to low and add the shredded cheddar and Parmesan cheeses to the sauce. Stir until the cheese is fully melted and the sauce is smooth. Season with black pepper and add more salt to taste, if needed.

Step 9

Return the caramelized onions to the skillet with the cheese sauce and stir to combine.

Step 10

In a separate skillet on medium heat, warm the leftover steak slices for 1-2 minutes until just heated through, being careful not to overcook them.

Step 11

Serve the warmed steak topped with the caramelized onion and cheese sauce. Garnish with fresh parsley, if desired. Enjoy!
