Ingredients

  • 12 oz linguine pasta
  • 3 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 lb large shrimp (peeled and deveined)
  • 2 medium leeks (white and light green parts, thinly sliced)
  • 4 cloves garlic (minced)
  • 1 cup dry white wine
  • 0.5 cup heavy cream
  • 2 tbsp lemon juice (freshly squeezed)
  • 0.5 cup Parmesan cheese (grated)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp crushed red pepper flakes (optional)
  • 2 tbsp fresh parsley (chopped)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the linguine pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the shrimp and season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Cook the shrimp for 2-3 minutes on each side, or until pink and opaque. Transfer the shrimp to a plate and set aside.

In the same skillet, add the remaining 1 tablespoon of olive oil and 2 tablespoons of butter. Add the sliced leeks and sauté for 5-6 minutes, stirring occasionally, until they are softened and slightly caramelized.
