Ingredients

  • 4 whole leeks
  • 3 tablespoons olive oil
  • 2 whole garlic cloves, minced
  • 0.5 cup kalamata olives, sliced
  • 0.5 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup water

Directions

Step 1

Trim and clean the leeks by cutting off the dark green tops and roots. Slice them in half lengthwise, then into 1-inch pieces. Rinse thoroughly to remove any dirt between the layers.

Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
