Ingredients

  • 2 whole leeks
  • 6 cups fresh spinach leaves
  • 2 tablespoons extra virgin olive oil
  • 2 whole garlic cloves
  • 1 tablespoon unsalted butter
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 1 tablespoon lemon juice

Directions

Step 1

Trim the dark green tops and root ends off the leeks. Slice the white and light green parts into thin rounds. Place the slices in a large bowl of water and swish them around to remove any dirt. Drain and pat dry with a clean kitchen towel.

Step 2

Rinse the fresh spinach leaves under cold water and remove any tough stems. Set aside.

Step 3

Peel and finely mince the garlic cloves.

Step 4

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Add the leeks to the skillet and stir to coat them in the oil. Sprinkle with a pinch of salt, and cook for about 5-7 minutes, stirring occasionally, until the leeks are soft and slightly golden.

Push the leeks to one side of the skillet and add the butter. Once melted, add the spinach to the skillet in batches, stirring gently to wilt each batch before adding more.
