Ingredients

  • 6 large leeks
  • 200 grams unsmoked bacon
  • 300 ml heavy cream
  • 150 ml milk
  • 3 pieces bay leaves
  • 2 tablespoons butter
  • 2 pieces garlic cloves
  • 50 grams parmesan cheese, grated
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat your oven to 190°C (375°F).

Step 2

Thoroughly wash the leeks to remove any grit, then trim off the dark green tops and root ends. Cut the leeks in half lengthwise.

Step 3

In a large pan over medium heat, melt the butter. Add the bacon (chopped into small pieces) and cook until lightly browned and crispy, about 5 minutes.

Step 4

Peel and finely mince the garlic cloves. Add them to the pan with the bacon and sauté for 1-2 minutes until fragrant.

Step 5

Arrange the leeks in a baking dish, cut-side up. If necessary, cut them further into smaller lengths to fit the dish.

Step 6

Pour the cooked bacon and garlic mixture evenly over the leeks.

Step 7

In a bowl, combine the heavy cream, milk, salt, and black pepper. Stir well and pour this mixture over the leeks, ensuring they are mostly submerged.

Step 8

Tuck the bay leaves into the dish, spreading them around evenly for flavor infusion.

Step 9

Sprinkle the grated parmesan cheese over the top.

Step 10

Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.

Step 11

After 30 minutes, remove the foil and continue to bake for another 15 minutes, or until the top is golden brown and bubbly.

Step 12

Remove the bay leaves before serving. Serve hot as a side dish or on its own with crusty bread.
